Toad in the Hole
- Serves: 2-3
- Time: 1 hour
- Source: Adapted from Jamie Oliver's batter mix
- Serve with: Mushroom and onion gravy, savoy cabbage, or just ketchup
- 8 sausages
- 285ml milk
- 115g plain flour
- 3 eggs
- pinch salt
- parsley (optional)
- vegetable oil
- Preheat oven to 240C
- Grill sausages until just cooked
- Meanwhile, whisk batter in large bowl (flour, milk, eggs, salt, parsley)
- Move cooked sausages into deep heavy baking dish/dishes with 0.5cm vegetable oil
- Heat in oven until oil smoking (~10 mins)
- Be quick at this bit. Take pans out, pour in batter (sausages still visible), - batter into pans, back into oven
- Don't open oven door until done, around 20-30 minutes. Deep brown and cooked through is good. Important to stop cooking before batter burns at the top, this will be inedible.
