Pea and Mint Purèe

Time: 10 minutes
Serves: 4

Perfect as a side to lamb or scallops.

250g frozen peas
25g butter
100ml chicken stock (or min to cook peas in, maybe 150)
mint, small bunch, or mint sauce to taste
Lemon juice

Put the peas and butter in a pan and season well
Pour stock only just to the top of the peas
Simmer for about 3-4 minutes until the peas are cooked (all floating)
Blend to a purée
Add mint sauce, taste and season further
Add splash lemon juice
Put back in the pan to keep warm
