Makes 2 cups
These amounts are a guide, adjust to preference, start with half of non avocado ingredients
- 2 ripe avocados, seeded and roughly diced
- 1 small onion, quartered
- (optional) 1 small green bell pepper, stemmed, seeded
- (optional) 1 jalapeƱo pepper, stemmed, seeded
- 2 medium cloves garlic, peeled
- 30g coriander (can include up to 15g parsley)
- 1/4 cup white wine vinegar
- 2tbsp lime juice
- Up to 1/3 cup olive oil
- Salt and pepper
- Food process everything above olive oil until smooth, then scrape down the sides
- Blend while drizzling in the olive oil only until nice dipping consistency
- Taste, then adjust:
- Salt and pepper
- Add sugar if needed, the herbs can add a bitterness
- Add lime juice if needed, if it tastes dull
