Guasacaca (Avacado dip)

Makes 2 cups
These amounts are a guide, adjust to preference, start with half of non avocado ingredients
  • 2 ripe avocados, seeded and roughly diced
  • 1 small onion, quartered
  • (optional) 1 small green bell pepper, stemmed, seeded
  • (optional) 1 jalapeƱo pepper, stemmed, seeded
  • 2 medium cloves garlic, peeled
  • 30g coriander (can include up to 15g parsley)
  • 1/4 cup white wine vinegar
  • 2tbsp lime juice
  • Up to 1/3 cup olive oil
  • Salt and pepper
  
  1. Food process everything above olive oil until smooth, then scrape down the sides
  2. Blend while drizzling in the olive oil only until nice dipping consistency
  3. Taste, then adjust:
    1. Salt and pepper
    2. Add sugar if needed, the herbs can add a bitterness
    3. Add lime juice if needed, if it tastes dull
