Pea Soup

Serves 4
  • 30g butter
  • 4 spring onions, chopped
  • 2 rashers of smoked streaky bacon, chopped
  • 500g frozen peas
  • 750ml cold water (or veg stock if vegetarian)
  • Pinch of sugar (depends on sweetness of the peas)
  • 1.5 tbsp lemon juice
  • Chopped fresh mint (or mint sauce)
  • (optional) Creme fraiche, to serve. Or double cream.

  1. Heat pan, add butter, soften bacon until fat is running, then add spring onions until softened, fragrant, not browned
  2. Add the peas and water, bring to the boil
  3. Add mint leaves then puree the soup using a blender or hand blender
  4. Add the lemon juice, sugar, salt, to taste
  5. Add double cream if you like
  6. Garnished with chopped mint and a swirl of creme fraiche.
