Cauliflower Cheese

Serves: 5-6
Time: 1 hour

Goes with: New Potatoes/Gnocchi and Greens
  • 6 sausages/8 rashers bacon
  • 1.5 portions of Cheese Sauce, or use 1 portion of the Mornay Sauce - but don't oven bake the cheese if using the Mornay, just mix the ingredients together and fry the breadcrumbs
  • 1 large cauliflower (900g without green bits)
  • 4 slices white bread (or whatever) for breadcrumbs
  • 75ml double cream (optional)
  • nutmeg
  • salt and pepper
  • carbs and greens

  1. Cook sausages or bacon, cut into bitesize pieces
  2. Make 1.5 portions of cheese sauce
  3. Chop cauliflower into bitesize pieces, flat edges are good
  4. Simmer cauliflower in well salted water for four minutes, then drain
  5. Fry cauliflower in butter, until one side is browned
  6. Blend breadcrumbs, then fry in butter
  7. Mix everything in a casserole, add double cream, pinch of nutmeg, salt and pepper
  8. Prep sides
  9. Heat cauliflower in the oven until piping hot (around 5 minutes, everything should still be warm)
