Followed this in a limited way used smoked cheddar and a similar tomato sauce to the simple cassoulet. More cheese in the centre, doesn't need saffron, parmesan is good with a central melty cheddar/mozzarella
1 tennis ball is a meal with salad - I used 300g rice to make 6 balls
