Iberico Abanico - salted steak fried until 62C
- after cooking, a wine deglaze should be dumped in leeks - taste it first
1-2 leeks, sliced thin, fried in butter/pork fat until soft, turn up for a bit of colour then down to min
sliced garlic
2tbsp+ of creme fraiche or double cream
little grated cheddar cheese (taste)
salt to taste
dump in wine from pork, or reduced wine instead
