Pancakes

Two recipes - Crepes and fluffy American style

CREPES
Makes: 6-8, 2 each
Source:  River Cottage Everyday
  • 125g plain white flour
  • 1 medium egg
  • 300ml whole milk
  • salt
  • sunflower oil
  • caster sugar
  • lemon juice
  • Whisk flour, salt, egg, milk into a batter, leave for 20 minutes
  • Heat the pan, very little oil, ladle in the batter, it should be very thin.
  • Pan flip it in the air like a boss
SCOTCH PANCAKES

175g self-raising flour
1 tsp baking powder
40g caster sugar
1 small orange, zest only (optional)
1 free-range egg
200ml milk

AMERICAN STYLE
Makes: 4 pancakes, 1/2 each

•    130ml milk
•    1 large egg
•    135g plain flour
•    1 tsp baking powder
•    ½ tsp salt
•    2 tbsp caster sugar
•    25g butter (allowed to cool slightly), plus extra for cooking/serving

Serve with: Maple syrup, butter, bacon, eggs, so on.
  • Melt butter in non-stick pancake pan, allow to cool slightly
  • Whisk milk, egg, flour, baking powder, salt, caster sugar and butter until combined, no lumps
  • You should see the mixture bubble slightly after a while due to the baking powder.
  • Heat the pan over a medium heat, then dollop in a pancake's amount, 1/4 of the mixture.  Cook multiple at the same time if your pan allows.
  • When the pancakes start to bubble, turn over.  They should rise to 1cm.
