Caroline Elwood - French Cooking
- 300ml milk, plus extra to glaze
- 50g butter
- 1tsp salt
- 125g plain flour
- 4 eggs
- 100g Gruyere cheese
- Milk, butter, salt in a pan, bring to boil
- Remove from heat, beat in the flour with a wooden spoon
- Add eggs one at a time, beating until a shiny smooth paste
- Stir in the grated cheese
- Preheat oven to 190C/Mark 5
- Using a silicon mat or baking sheet, either dump with a spoon or pipe in circles, forming a 7 inch diameter ring with a deep edge, a space of around 2.5inch in the middle. Shepherd the mixture into a ring with the spoon.
- Sprinkle with the cubed cheese, brush with milk
- Bake 190C/Mark 5 for 40 - 45 minutes until well risen and golden. Light brown not dark, careful.
- Serve hot or cold.
