Gougère

Caroline Elwood - French Cooking

  • 300ml milk, plus extra to glaze
  • 50g butter
  • 1tsp salt
  • 125g plain flour
  • 4 eggs
  • 100g Gruyere cheese
    • 75g grated
    • 25g cubed

  1. Milk, butter, salt in a pan, bring to boil
  2. Remove from heat, beat in the flour with a wooden spoon
  3. Add eggs one at a time, beating until a shiny smooth paste
  4. Stir in the grated cheese
  5. Preheat oven to 190C/Mark 5
  6. Using a silicon mat or baking sheet, either dump with a spoon or pipe in circles, forming a 7 inch diameter ring with a deep edge, a space of around 2.5inch in the middle. Shepherd the mixture into a ring with the spoon.
  7. Sprinkle with the cubed cheese, brush with milk
  8. Bake 190C/Mark 5 for 40 - 45 minutes until well risen and golden. Light brown not dark, careful.
  9. Serve hot or cold.
