Note: Mess around with the amounts, especially tomatoes. Eyeball it.
Food process, keep chunky:
- 1/4 - 1/2 red onion
- 1 small clove garlic
- 1 tbsp lime juice
- 2 -3 tbsp white wine vinegar
- 15g coriander leaf
- (optional) up to 1 chipotle chile (or preferred spicy substitute)
- 150 - 200g cherry tomatoes
- salt/pepper to taste
