Goes with: Beef Barbacoa. Carnitas, Chili, Fish and Chips
- 1 red onion
- 1 handful coriander leaves
- 1 tablespoon salt
- 2 tablespoons sugar
- Cider vinegar
- Slice the onion very thinly, and in a saucepan add the coriander, salt, sugar.
- Cover with minimal liquid, 1 part water to 2 parts vinegar
- Boil then turn off the heat, refrigerate overnight
