Pickled Red Onion

Goes with: Beef Barbacoa. Carnitas, Chili, Fish and Chips

  • 1 red onion
  • 1 handful coriander leaves
  • 1 tablespoon salt
  • 2 tablespoons sugar
  • Cider vinegar
  1. Slice the onion very thinly, and in a saucepan add the coriander, salt, sugar.
  2. Cover with minimal liquid, 1 part water to 2 parts vinegar
  3. Boil then turn off the heat, refrigerate overnight
