Meringue

Goes with: fruit coulis/jam, whipped double cream

Makes ~10 golf ball meringues 

3 medium egg whites
1/2 tsp cream of tartar
88g caster sugar one bowl
87g caster sugar with 1 1/2 tsp cornflour another bowl

Egg whites into electric mixer whisk high 30 secs until slightly frothy
Add cream of tartar and small pinch salt, whisk max until soft peaks
Scatter half of plain sugar bowl over, whisk in, add remaining, whisk max until stiff peaks
Remove bowl from mixer gently fold in cornflour sugar with metal spoon
Add food colouring if you wish
Spoon spiky golf balls onto lined baking sheet
80C for 2h 10m mins then turn off oven and leave them in there for an hour or two.
