Makes: 1 costa cup
Version with no grill, less heat:
- 450g tomatillos husks removed and washed
- 1 smallish onion, halved
- ~20?g coriander
- ? poblano (orig. jalapeƱo)
- 1/4 tsp (1/8?) salt
- Oven on 220C
- little oil in frying pan highest heat, char the onion face down and the tomatillos on multiple sides
- Transfer to oven, cook 5-10 mins until darkened and flavour developed
- Transfer to food processor and add coriander, blitz
- Taste - may want more of salt, sugar, lime juice
- Can be stored up to 5 days
