Charred Tomatillo Salsa Verde

Makes: 1 costa cup

Version with no grill, less heat:

  • 450g tomatillos husks removed and washed
  • 1 smallish onion, halved
  • ~20?g coriander
  • ? poblano (orig. jalapeƱo)
  • 1/4 tsp (1/8?) salt

  1. Oven on 220C
  2. little oil in frying pan highest heat, char the onion face down and the tomatillos on multiple sides
  3. Transfer to oven, cook 5-10 mins until darkened and flavour developed
  4. Transfer to food processor and add coriander, blitz
  5. Taste - may want more of salt, sugar, lime juice
  6. Can be stored up to 5 days
