Chimichurri Sauce (Skirt Steak Sauce)

Serves: 5ish (1/3 of original recipe)
Goes with: 800-900g Skirt Steak (Churrasco Steak), Grilled meats, roasted or fried potatoes, grilled veg

  • 1 and 2/3 tbsp dried oregano
  • 1 tbsp red pepper flakes or 1/2 tbsp cayenne (half this for K)
  • 20g parsley leaves and tender stems only
  • 2 cloves garlic
  • 39g red wine vinegar
  • 79g veg oil
  • 1/8 tsp salt
  • few grinds of pepper
  • (note sauce book adds mint which I liked)

  1. oregano and red pepper flakes into costa mug then 15ml boiling water to hydrate, stir
  2. fine chop parsley, mince garlic
  3. add all ingredients
  4. fridge 1 week max when sealed
