Winter Squash and Apple Soup

Serves 4

2 medium Golden Delicious apples, peel, quarter, core, cut into ¾ inch chunks
1 large butternut squash, peeled and cut into ¾ inch chunks
1 small onion, chopped
1 can vegetable broth (or same veggie stock)
fresh thyme (dried fine)
small (1 cupish) single cream


Optional:
Serve with rustic bread and fried halloumi (cut halloumi into 8 slices, then dip into seasoned flour - pepper + oregano. then fry until light blown on both sides)


In big saucepan/casserole, heat 2 tbsp vegetable oil
Fry onions until soft
Stir in apples, squash, 1tbsp thyme, salt, pepper, 1 cup water
Boil, then reduce heat to low
Cover and simmer, stirring frequently for 20-25 mins until squash is tender
Blend the soup in batches
Return pureed mixture to pan, stir in cream, stirring occasionally
Heat through over medium heat, don’t boil

Serve garnished with chopped fresh thyme
