Sautéed Mushrooms

Cooking For Geeks and cookingissues.com pointed to soaking before frying from cold.  By sponging then evaporating the water, the mushrooms collapse before they're able to take on the oil.  Use less oil than normal, and crowd the pan.

  • White button mushrooms
  • Butter
  • Olive oil
  • Chop and soak mushrooms
  • Fry from cold in a small, crowded pan
  • Throw in butter and oil
