Beetroot and Feta Mixup

This is a wang-it dish, the core is beetroot and feta. The following is a goes-together list,
  • 500g raw beets, roasted for an hour then skins removed, or use pre-cooked and roast less
  • 100g feta
  • cumin
  • thyme
  • red onion
  • carrots, julienned
  • asparagus
  • spring onion
  • garlic
  • salt and pepper
  • cous cous
  • lemon juice
  • mint, coriander, parsley, chives
  • asparagus
Optional extra step, whizzed in processor then sprinkled on top
  • 1/3 cup extra virgin olive oil
  • 1 small clove garlic
  • 80g pistachios, shelled, toasted in frying pan, or almonds, skinned/toasted/blitzed
  • 1 tsp caster sugar
  • chives

In general:
Roast, peel, slice beets
Optionally roast carrots, red onions, garlic
Roast everything with feta cubes for 20-25
Make cous cous with lemon and herbs
Mix all together, serve with salad
