This is a wang-it dish, the core is beetroot and feta. The following is a goes-together list,
- 500g raw beets, roasted for an hour then skins removed, or use pre-cooked and roast less
- 100g feta
- cumin
- thyme
- red onion
- carrots, julienned
- asparagus
- spring onion
- garlic
- salt and pepper
- cous cous
- lemon juice
- mint, coriander, parsley, chives
- asparagus
Optional extra step, whizzed in processor then sprinkled on top
- 1/3 cup extra virgin olive oil
- 1 small clove garlic
- 80g pistachios, shelled, toasted in frying pan, or almonds, skinned/toasted/blitzed
- 1 tsp caster sugar
- chives
In general:
Roast, peel, slice beets
Optionally roast carrots, red onions, garlic
Roast everything with feta cubes for 20-25
Make cous cous with lemon and herbs
Mix all together, serve with salad
