1 kg. of chicken wings/thighs/drummers
1 1/2 tsp salt
1/4 tsp ground black pepper
juice of half a lemon
1 tbsp oil
3 tbsp corn flour
1 1/2 tsp crushed garlic
2 tsp of English mustard
1 tbsp wholegrain mustard
1 tsp paprika
2 tsp soy sauce
rind of a lemon
3 tbsp honey
Method:
Preheat the oven to 375° F/ 190° C.
Cut the tips off the chicken wings.
Season the wings with 2 tsps. of salt, the ground black pepper and the lemon juice. Mix well, add the oil and mix again. Add the corn flour and give it a final mix.
Line a baking sheet with a non stick liner. Arrange the wings on a single layer and bake for ~30 mins turning if necessary, check after 20 smaller ones can cook fast. The wings should be fully cooked and golden brown after this stage.
While the wings are in the oven, mix the garlic, the two kinds of mustard, paprika, chilli powder, soy sauce, lemon rind and honey in a mixing bowl.
Put done wings in this bowl and mix until all the chicken pieces are well coated. Back on baking tray, drizzle the remaining glaze in the bowl over and return to the oven. Cook for a further 5-10 minutes just to set the glaze.
