Dijon Cream Sauce

Ingredients 

1/4 cup chopped shallots or minced onions
1 cup white wine
3/4 cup chicken stock
1/2 cup heavy cream
2 tablespoons Dijon mustard
1 tablespoon chopped parsley

Shallots in butter until soft
Add wine and stock, reduce to half
Low heat, mix in cream
Add Dijon and parsley, reduce slowly to desired consistency
