BBQ Elotes Mexican Corn on the Cob


1 cob per person. For 4 cobs:
  • 4 ears shucked corn
  • 110finely crumbled Cotija or feta cheese, more to serve
  • 60ml mayo
  • 60ml sour cream or Mexican crema
  • 1/4 cup (15g?) finely chopped coriander
  • 1/2 teaspoon ancho or guajillo chile powder, plus more for serving
  • 1 medium clove garlic, finely minced
  • 1 lime, cut into wedges


  1. 2 zone fire
  2. Boil corn, al dente but edible
  3. Meanwhile combine cheese, mayonnaise, sour cream or crema, cilantro, chili powder, and garlic in a large bowl. Stir until mixed
  4. Char corn on hot side, turn over done all over
  5. Coat corn in mixture, more feta, chili powder, and squeeze lime wedges to serve
