1 cob per person. For 4 cobs:
- 4 ears shucked corn
- 110g finely crumbled Cotija or feta cheese, more to serve
- 60ml mayo
- 60ml sour cream or Mexican crema
- 1/4 cup (15g?) finely chopped coriander
- 1/2 teaspoon ancho or guajillo chile powder, plus more for serving
- 1 medium clove garlic, finely minced
1 lime, cut into wedges
- 2 zone fire
- Boil corn, al dente but edible
- Meanwhile combine cheese, mayonnaise, sour cream or crema, cilantro, chili powder, and garlic in a large bowl. Stir until mixed
- Char corn on hot side, turn over done all over
- Coat corn in mixture, more feta, chili powder, and squeeze lime wedges to serve
