Apple Veloute - gordon ramsey/good food
- 25 g butter
- 4 onions, finely chopped
- 2 Granny Smith apples, cored, sliced
- 250ml chicken stck
- 142ml double cream
- Heat butter, cook onions/apples -10 mins until soft, not coloured
- Pour in stock and simmer for 8 mins until apples start to collapse
- Stire in cream, simmer 2 mins more
- Season S+P , blend
