Veloutes

Apple Veloute - gordon ramsey/good food
  • 25 g butter
  • 4 onions, finely chopped
  • 2 Granny Smith apples, cored, sliced
  • 250ml chicken stck
  • 142ml double cream
  1. Heat butter, cook onions/apples -10 mins until soft, not coloured
  2. Pour in stock and simmer for 8 mins until apples start to collapse
  3. Stire in cream, simmer 2 mins more
  4. Season S+P , blend
